           The thought of how to make Tofu more delicious leads to lots of ideas. First of all, the truth that Thailand is the big resource of high quality beans which is the raw material of Tofu producing, help be easy to seek the best kind of beans to produce best kind of Tofu within the country.

         In ancient times, producing Tofu was a very complicating process, which took a long time with low quality product, moreover, the product could not be hygienically guaranteed.

         Nowadays, producing Tofu is not as complicating as it used to be. Understandings, care, including new technologies from Japan are what we use as the main theme in producing Tofu and most of all, the water using in the process must be surely clean and fresh.

         There are many kinds of Tofu, verified by their flavors, softness, colors and brightness. These are what we use in determining the quality of each kind of Tofu and
in preparing each dish. That is the reason why we should have some knowledge about Tofu, as each kind is good for each dish, for example we use soft Tofu in soup and harder Tofu in other dishes which take more time in cooking, moreover, some kinds of Tofu after being fried and then steamed can be kept for a long time as in Chinese dish (Pa-low).The recommended Tofu are as follow: KINU, MOMEN ,Soft Tofu, Steamed Tofu, Pasteurized Tofu ,Bean Milk, Tofu in Ginger Syrup, Tofu Ice-cream etc.

         The reasons why Tofu is very well-known are its nutritious composition. Many studies have found out that there is as much protein in Tofu as in other kinds of meat but no cholesterol or amino acid which cause blood clotting and cancer developing
